Barley Tavern starts a lunch pop-up at Cebada Rooftop
Jorgie Ramos has brought burgers and French dips back to Coral Gables ahead of a planned permanent Barley location.
Barley Tavern is serving lunch at Cebada Rooftop, 124 Giralda Avenue, with an October 22 launch listed on its official site. The pop-up's menu includes a smoked-brisket burger, French dips and a crispy chicken sandwich. Service runs Wednesday through Saturday. Chef Jorgie Ramos told The Burn Miami the lunchtime format would precede a permanent Coral Gables home, whose address had not been announced.
Using an existing kitchen for a different daypart can test demand before another lease is signed. Keep separate sales, labor and purchasing records so the trial produces usable evidence. The host operation also needs agreed storage, preparation and handover times to protect its regular service.
