Café Marseille brings a scratch bakery to western West Palm Beach
Jean Marseille has moved from a commissary kitchen into a storefront on Okeechobee Boulevard.
Café Marseille opened July 31 at 7776 Okeechobee Boulevard, according to October reporting by the Palm Beach Post. Jean Marseille's bakery makes sourdough, pastries and filled baguettes. He previously baked from a commissary kitchen and continues selling at the West Palm Beach GreenMarket. The shop gives the business a permanent retail presence in the western part of the city.
Our read
Keeping a market stall while running a bakery can create two useful sales channels. It also puts pressure on the same production team. Set separate quantities, delivery times and contribution targets for each channel so market sales do not leave the shop short.
