RimLay plans Thai-inspired seafood boils in Pompano Beach
The owners are targeting the period after Thanksgiving for an 80-seat restaurant on East Atlantic Boulevard.
Tammy and Dusadee Boonlong are preparing RimLay at 3428 East Atlantic Boulevard. Their plan combines Cajun-style seafood boils with Thai flavors, with about 40 indoor seats and another 40 outside. Beer and wine are also planned. The owners, who have operated restaurants in the Washington, D.C., area, told Business Debut they aim to open after Thanksgiving and no later than December 1.
A seafood boil menu needs close attention to purchase prices, usable yield and how guests understand portion sizes. An outdoor patio also makes the sales forecast sensitive to weather. Cost the menu and staffing against the indoor seats before counting on every patio table.
